Drinkwithus went undercover to investigate the whispers surrounding one covert Operation Dagger and boy, what a venture it was. Tipped off by an anonymous caller, we headed to Ann Siang Hill. After creeping through dank alleys, skirting shadowy figures and slinking down a dim staircase, we barely made it with limbs intact to Oxwell & Co’s austere new playground.
Yes. This is Operation Dagger.
But the perils don’t stop there. You’re invited to pick your poison from a selection of dangerous drinking water, and lest you wish to play the system, alcohol names are omitted.
This time, my pick was The Egg. In an incubator of fired star anise and fragrant hay, the smouldering smells curl upwards in cobras when you open the lid to extract the cup from its nest. The liquid itself is a light beige chawanmushi colour.
The salted egg liqueur did not disappoint, the initial flavour being salty and slightly textured. This gave way to the sugary spices of vanilla and caramel, forming a savoury yet sweet, yolky cream and finished off curiously muted. It was a drink to be enjoyed sip by sip. And whilst they could have been a bit more generous on the quantity front, the quality and skills involved of the homemade spirits and liqueurs are indubitable.
